Hi guys, after a long winter this great Vegetarian Miso Soup.
With its soothing broth and unique flavor, miso soup has been enjoyed for centuries. Ron Badach of Callicoon Kitchen makes his delicious vegan version that is so simple you can prepare and enjoy in about 10 minutes. Ron uses traditional miso, tofu, scallions, baby spinach and shiitake mushrooms and a vegetable stock in place of dashi as a flavorful vegan substitute.
